  • 1/4 teaspoon dried basil

  • 1/4 teaspoon dried marjoram

  • 1/4 teaspoon dried rosemary

  • 1/4 teaspoon dried sage

  • 1/4 teaspoon dried parsley

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon paprika

  • 1/4 teaspoon cayenne pepper

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup shredded Monterey jack cheese

  • 1 (32 oz) package frozen tater tots

Instructions:

  1. Preheat the oven to 375°F. Grease a 9x13-inch baking dish with cooking spray.

  2. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.

  3. In the same skillet, add the onion, bell pepper, mushrooms, and garlic. Cook until the vegetables are tender.

  4. Add the green onions, salt and pepper to skillet and cook for another minute.

  5. In a large bowl, whisk together the eggs, milk, thyme, oregano, basil, marjoram, rosemary, sage, parsley, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

  6. Spread the tater tots evenly in the bottom of the prepared baking dish.

  7. Sprinkle the bacon, vegetables, and cheese over the tater tots.

  8. Pour the egg mixture over the top of the casserole.

  9. Bake for 30–35 minutes, or until the eggs are set and the cheese is melted and golden brown.

  10. Let cool for a few minutes before serving. Garnish with extra green onions and bacon if desired.
